Apple Coffeecake 2 Recipe

  1. TO MAKE COFFEECAKE: Peel, core, and chop apples into small pieces. Place in large bowl. Toss with juice from lemon and 1 ts. cinnamon. Set aside. In large mixing bowl, cream butter and sugar until fluffy. Beat in eggs, sour cream and vanilla extract. In another bowl, sift together flour, baking powder and soda. Fold into sour cream mixture. Stir in chopped apples.
  2. TO MAKE FILLING: In small bowl, mix 1 tb. cinnamon, brown sugar and chopped pecans.
  3. TO ASSEMBLE: pour half of batter into greased and floured 10" tube pan. Sprinkle filling over batter. Cover with remaining batter. Smooth top.
  4. TO BAKE COFFEECAKE: Bake in 350 degree oven for 1 hour and 20 minutes, or until skewer inserted in middle comes out clean. Remove from oven. cool 10 minutes in pan. Turn onto wire rack. Allow to cool completely before cutting.
