Apple Puffed Pancake Recipe

  1. Preheat oven to 425'.
  2. Beat eggs, milk, flour, sugar, vanilla and cinnamon in blender or large bowl. Batter may be left slightly lumpy.
  3. Melt butter in a 12" quich dish or 9x13" baking dish in the oven. Add apple slices to baking dish and return to oven, heat until butter sizzles but does not brown.
  4. Immediately pour batter over apples, sprinkle with brown sugar. Bake for 20 minutes, or until puffed and brown. Serve immediately.
