Apricot Butter Squares Recipe

Mmmmmm! A no bake dessert/cookie. Fruit and cookie squares are great to have around the house during the holiday season. I think even your children will be surprised at how yummy these apricot squares taste, even if they are not apricot fans.

Ingredients:

Directions:

  1. In a 13 x 9-inch pan make a layer of half the crushed vanilla wafers.
  2. Mix together the butter, confectioners' sugar, eggs and vanilla extract. Pour this over the vanilla wafers.
  3. Cover the mixture with the apricot halves, then sprinkle the chopped nuts over the top.
  4. Whip heavy cream until stiff and spread over apricots.
  5. Cover the top with the remaining half of the vanilla wafers.
  6. Refrigerate for at least 24 hours.
  7. Cut into squares to serve.
