Barfield Potato Salad Recipe

Ingredients:

Directions:

  1. * Mash cooked potatoes to a chunky state.
  2. * Combine all ingredients and mix well.
  3. * Place in a serving bowl and smooth out the top.
  4. * Garnish:
  5. Slice the eggs into thin slices, in the shape of overlapping fans (one on top of the other).
  6. * Place in the center of the bowl.
  7. * Quarter the pickles and place evenly in a circle around the eggs.
  8. * Place a half of an olive between each pickle.
  9. * Sprinkle all over lightly with paprika.
  10. * Chill before serving.
