Beef Fajitas Recipe

  1. Ingredient notes:- Beef steak should be sirloin,
  2. flank, or round. Pickled jalapeno peppers should be
  3. chopped and may be omitted if not desired. Toppings
  4. for fajitas are a personal choice. Suggestions: Salsa,
  5. chopped tomatoes, shredded Cheddar cheese, guacamole,
  6. sour cream, shredded lettuce.
  7. Variations: for chicken fajitas, omit beef and use 1
  8. lb skinless, boneless chicken breasts, cut into thin
  9. strips. Saut‚ for 3 to 5 minutes or until no longer
  10. pink. Directions: Wrap stacked tortillas in foil. Bake
  11. at 350F(180C) for 5 minutes
  12. or until warm. In large skillet, heat 1 TB oil over
  13. medium-high heat. Cook and stir garlic, onion and
  14. sweet pepper for 3 to 5 minutes or until tender.
  15. Remove from pan. Add remaining oil to skillet. Brown
  16. beef, about 2 minutes. Stir in chili powder, lime
  17. juice, jalapeno peppers and cumin. Return vegetables
  18. to skillet and heat through. Spoon meat mixture onto
  19. centre of each tortilla, top with desired toppings.
  20. Fold up bottom edge, then roll up.
