Ingredients:
- 4 tbsp butter
- 1 onion, chopped
- 1 carrot, chopped
- 1 stalk celery, chopped
- 1/4 cup dry white wine
- 3-4 pounds bluefish, split and boned
- 1/4 pound mushrooms, chopped
- 2 tbsp chopped parsley
- Salt
- 1/8 tsp paprika
Directions:
- Preheat the oven to 425 F. Heat the butter in a flameproof baking dish large enough to accommodate the fish. Add the onion, carrot, celery, mushrooms, and parsley, and cook, stirring often, for 5 minutes.
- Add the wine and cook 4 minutes more. Remove half the vegetables, lay the fish on top. Cover with the remaining vegetables, and sprinkle with salt and paprika.
- Cover loosely with foil, and bake 20 minutes.
