Coconut Pie Recipe
Ingredients:
- 3 beaten eggs
- 1 1/2 cup of sugar
- 1/2 cup of butter or margarine, melted
- 4 tsp of lemon juice
- 1 tsp of vanilla
- One 3 1/2 ounce can (1 1/3 cup of) flaked coconut
- One unbaked 9 inch pastry shell
Directions:
- Combine the eggs, juice, butter or margarine, lemon juice and vanilla. Stir in the coconut.
- Pour the filling into shell, unbaked pastry shell.
- Bake in moderate oven 350 degrees F. for 40 to 45 minutes but no more. Cool well before serving.
