Codfish Cakes Recipe
Ingredients:
- 1 small onion, chopped
- 8 sprigs parsley, chopped
- 2 cups boiled potatoes, cubed fine
- 2 hardboiled eggs, chopped
- 3 tablespoons butter, melted
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 pound cooked cod, cut coarse
Directions:
- Mix all ingredients together. Chill for 1 hour.
- Shape into round, flat cakes, using about 1/3 cup for each cake. Coat with seasoned bread crumbs. Fry in vegetable oil.
- Makes 9 to 10 (3-inch) cakes.
