Fried Turkey Cutlets Recipe

  1. Combine the buttermilk, worcestershire, mustard, and
  2. cayenne in a shallow baking dish. Stir in the onion
  3. and garlic and add the turkey cutlets, turning to
  4. coat. Cover and refrigerate for at least 4 hours, or
  5. overnight.
  6. Preheat the oven to 350. Spread the bread crumbs on a
  7. baking sheet and toast for about 5 minutes, until
  8. lightly browned. Transfer to a plate and season with
  9. salt and pepper.
  10. Drain the turkey cutlets and discard the marinade.
  11. Coat the cutlets with the seasoned bread crumbs,
  12. shaking off the excess. Coat a large nonstick skillet
  13. with cooking spray and warm over moderately high heat.
  14. Add one-third of the cutlets and spray them lightly.
  15. Fry the cutlets, turning once, until cooked through
  16. and golden, about 3 minutes per side. Transfer to a
  17. platter, cover loosely with foil, and keep warm. Wipe
  18. out the skillet and repeat with more spray and the
  19. remaining turkey. Serve hot, spooning gravy over the
  20. top. Serve perhaps with dumplings or spaetzle.
