Ginger,Cantaloupe-Coconut Milk Soup Recipe
Ingredients:
- 2 med ripe cantaloupes, cut into halves, seeded
- 1/2 cup sugar
- 1/3 cup fresh orange juice
- 1 tbsp fresh lime juice
- 1 tbsp fresh lemon juice
- 1 can coconut milk, 8-ounce
- 1/4 tsp vanilla extract
- 1/8 tsp ground ginger
- 3/4 cup half-and-half
- Rum to taste
Directions:
- Scoop the pulp from the cantaloupes. Place in large bowl.
- Add the sugar, orange juice, lime and lemon juices, coconut milk, vanilla, ginger, half-and-half and rum; mix well.
- Pour half of the mixture into a blender container. Process for 2 to 3 minutes or until smooth. Repeat with the remaining mixture.
- Pour into a large nonreactive bowl. Chill, covered for several hours.
- Ladle into teacups or soup bowls.
