Ginger,Cantaloupe-Coconut Milk Soup Recipe

Directions:

  1. Scoop the pulp from the cantaloupes. Place in large bowl.
  2. Add the sugar, orange juice, lime and lemon juices, coconut milk, vanilla, ginger, half-and-half and rum; mix well.
  3. Pour half of the mixture into a blender container. Process for 2 to 3 minutes or until smooth. Repeat with the remaining mixture.
  4. Pour into a large nonreactive bowl. Chill, covered for several hours.
  5. Ladle into teacups or soup bowls.
