Light Zucchini Nachos Recipe
Ingredients:
- 1 medium zucchini (7 to 8 inches long), sliced
- 1/8 tsp onion powder
- 1/4 tsp basil leaves, crushed
- 1/4 cup shredded reduced fat Mozzarella cheese
- 2 tbs coarsely chopped pepperoni
- 1 to 2 tsp grated Parmesan cheese
Directions:
- Heat oven to 350� F. Arrange zucchini slices in 9-inch pie pan. Sprinkle with onion powder and basil. Top with Mozzarella, pepperoni, and Parmesan. Bake for 5 to 10 minutes or until cheese is melted.
