Mexican Chicken Salad Recipe
Ingredients:
- 2 c Cooked Chicken; Cut Up
- 1/4 c Dairy Sour Cream
- 1/4 c Mayonnaise Or Salad Dressing
- 1/4 c Carrot; Finely Chopped
- 2 tb Cilantro;Fresh,FinelySnipped
- 2 tb Capers
- 2 tb Pimentos; Canned, Chopped
- 2 tb Lime Juice
- 1/2 ts Cumin; Ground
- 1/2 ts Oregano Leaves; Dried
- 1/4 c Onion; Chopped, 1 Small
- Lettuce Leaves
- 1 Avocado, peeled and cut into wedges
- Paprika
Directions:
- Toss all ingredients except lettuce, avocado and paprika. Serve on lettuce with avocado; sprinkle with paprika.
