  1. 1. Heat 1 teaspoon vegetable oil in skillet over medium-high heat. Add bell pepper and onion, cook until almost tender. Stir in pineapple, pineapple juice, fajita spices and shrimp; continue to stir and cook until shrimp is heated through. 2. Place 1/2 cup mixture on each tortilla, roll up and serve. Or wrap in plastic wrap and refrigerate until ready to serve or transport to picnic. Enjoy this delicious Mexican recipe!
