Oatmeal Coffee Cake Recipe
Ingredients:
- 1 cup oatmeal
- 1 1/4 cups hot water
- 1 1/4 cups flour
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 cup margarine, melted
- 2 whole eggs
- 1 teaspoon vanilla extract
- Topping
- 2/3 cup brown sugar, packed
- 2 cups flaked coconut
- 1 cup pecans, chopped
- 1/4 cup margarine, melted
- 2 teaspoons vanilla extract
- 1/3 cup evaporated milk
Directions:
- Cover oatmeal with hot water and let set for 20 minutes.
- Meanwhile, mix together dry ingredients. Add margarine, eggs, vanilla extract and mix well. Add oatmeal and mix. Pour into a 13 x 9-inch pan and bake at 350 degrees F for 30 minutes. Spread Topping on while hot.
- While cake is baking, mix together all ingredients. When cake is done, but still hot, spread topping on and return to the oven for 15 minutes.
