Pecan Coffeecake Recipe
Ingredients:
- 1 (18.25 ounce) box yellow cake mix
- 1 small box instant vanilla pudding
- 3/4 cup oil
- 3/4 cup water
- 1 teaspoon vanilla extract
- 4 eggs
- 1/2 cup pecans, chopped

- Streusel
- 1 cup sugar
- 1/2 cup pecans, chopped
- 2 teaspoons cinnamon
Directions:
- Mix together: cake mix, pudding, oil, water and vanilla extract. Beat in eggs one at a time. Then beat mixture 6 minutes on high speed. Grease and flour Bundt pan and cover bottom with 1/2 cup pecans. Layer 1/3 batter and 1/3 streusel mix until all are used. Bake at 325 degrees F for 50 to 60 minutes. Run knife around pan flip onto a serving plate. Cool 8 minutes then drizzle with icing.
- Icing
- 1/2 cup confectioners' sugar
- 1 tablespoon milk
- 1/2 teaspoon vanilla extract
- NOTE: Even good without icing. Once I forgot the pecans on the bottom - just mixed them in the batter turned out just as good. Never last long at our house.
