  1. Place the bread in a bowl, cover with water, soak for 10 seconds, then squeeze out the excess water. Place the drained bread in a food processor with the shrimp, chili, ginger, garlic, cilantro, salt, and egg. Pulse until well blended.
  2. Heat the oil and shollow-fry spoonfuls of the mixture for 3 minutes on each side until puffed and golden brown.
  3. Drain on paper towels and serve warm on a bed of baby lettuce leaves.
