Ingredients:
- 12 ounces canned shrimp
- 1/3 cup mayonnaise
- 1 tbsp pineapple juice
- 1/2 tsp curry
- 1/8 tsp red pepper flakes
- 1/2 cup celery, chopped
- 1/4 cup red bell pepper, diced
- 1/2 cup pineapple chunks, crushed
- 1/2 tsp salt
- 1 lettuce head, shredded
Directions:
- In a bowl combine canned shrimp, mayonnaise, pineapple juice, curry, red pepper flakes, chopped celery, diced red bell pepper, and crushed pineapple chunks. Season with salt. Cover and chill until served.
- Serve over shredded lettuce.
