Ingredients:
- 1/4 cup flour
- Salt and ground pepper
- 6 soft-shell crabs
- 6 tbsp butter
- 1 tbsp oil
- Juice of 1 lemon
Directions:
- Season the flour with salt and pepper, dust the crabs with it, and shake off excess.
- In a large skillet, heat the butter and oil. Toss in the crabs and cook over moderately high heat about 3 minutes each side. Remove to a warm platter.
- Squeeze in the lemon juice and stir, scraping up all the brown bits. Pour over the crabs.
