Soft-Shell Crabs, Sauteed Recipe

Directions:

  1. Season the flour with salt and pepper, dust the crabs with it, and shake off excess.
  2. In a large skillet, heat the butter and oil. Toss in the crabs and cook over moderately high heat about 3 minutes each side. Remove to a warm platter.
  3. Squeeze in the lemon juice and stir, scraping up all the brown bits. Pour over the crabs.
