Stuffed Spud Surprise Recipe
Ingredients:
- # 4 baking potatoes, scrubbed
- # 1 oz. ( 25g ) margarine
- # 1 tablespoon milk
- # salt and ground black pepper
- # 14 oz. ( 415g ) can sausages in brine, drained and sliced
- # 7 oz. ( 175g ) can sweetcorn, drained
- # 1 oz. ( 25g ) cheddar cheese, grated
Directions:
- # Pre-heat oven to 400F, Gas Mark 6, 200C
- # Prick potatoes with a fork and bake in the pre-heated oven for about 1 hour
- # When cooked, cool for 5 minutes, then cut in half length ways
- # Scoop out center into a bowl and mash in margarine, salt and pepper and milk
- # Stir sausages and sweetcorn into mashed potatoes and spoon into skins
- # Sprinkle with cheese and return to oven for 20-25 minutes
