Swiss Omelet Recipe
Ingredients:
- # 4 eggs
- # 2 oz. (50g) mushrooms, sliced
- # 2 tomatoes, peeled and sliced
- # 1 cooked potato, diced
- # 2 tablespoons cooked, green peas
- # salt and pepper
- # paprika
- # 1 oz. (25g) butter
- # 1 small onion, finely chopped
Directions:
- # Melt the butter in a good sized frying pan
- # Add the onion and cook until soft, then add potato, tomatoes, peas and mushrooms and sauté all well together
- # Beat the eggs, add a little seasoning and pour over the contents of the pan
- # cook until the egg has just set then turn upside down on a hot dish
- # Sprinkle with paprika and serve with a side salad
