Yolkless Egg Salad Recipe
Ingredients:
- 6 large hard cooked eggs
- 3 tbs sweet pickle relish
- 2 tbs finely chopped green onions
- 1 tbs diced pimiento, undrained
- 1/2 cup cooked mashed potatoes
- 3 tbs mayonnaise
- 1 tbs creamy mustard
- 1/2 tsp salt (optional)
- 1/4 tsp ground black pepper
- 2 tsp curry powder (optional)
Directions:
- Remove yolks from eggs; discard or reserve for another use. Chop egg whites. Combine egg white, pickle relish, green onions, and pimiento; set aside. Combine mashed potatoes and next 4 ingredients; stir in curry powder, if desired. Fold into egg mixture. Serve as a salad over lettuce, a sandwich filling, or a stuffing for vegetables.
