Pesto Pasta Salad
Fresh herbs, artichoke, and mushrooms make a fresh and flavorful dressing for Springtime pasta . Chopped almonds add a delicious crunch, and zesty lemon really brightens it up.
Ingredients:
- arugula: 1/2 cup arugula (for pesto)
- basil: 1/2 cup basil (or cilantro, for pesto)
- almonds: 1/4 cup almonds (for pesto)
- garlic: 2 clove garlic (medium, or 1 large, for pesto)
- extra-virgin olive oil: 1/2 cup extra-virgin olive oil (for pesto)
- lemon juice: 1 tbsp lemon juice (for pesto)
- sea salt: 2 tsp sea salt (for pesto)
- Tabasco Hot Sauce: 1 tsp Tabasco hot sauce (for pesto)
- artichoke hearts: 1/2 cup artichoke hearts (canned or fresh, quartered)
- mushrooms: 1/2 cup mushrooms (your favorite variety, or button mushroom, quartered)
